Ingredients
- 1 large bunch Kale chopped
- 1 Apples sliced thinly
- 1 Carrots julienne
- 1 handful purple or white Cabbage shredded
- 1 Avocados cubed
- 1/4 cup Tahini
- 2 tablespoons Water
- 1 teaspoon oranges zest
- juice from 1 oranges
- 1 tablespoon Honey
- 1 tablespoon Apple Cider Vinegar
- 1 tablespoon toasted Sesame oil
- freshly ground Black pepper to taste
- pink salt to taste
- 1/4 cup toasted Sunflower seeds
This salad will remain fresh if made ahead of time, so it´s a perfect dish to bring to a potluck.
Serves: 4
Combine the vegetables in a large mixing bowl. In a small bowl, whisk tahini, water, zest, orange juice, honey, vinegar, salt and pepper until combined. Pour the dressing over the vegetables and toss until throrougly coated. Sprinkle with toasted sunflower seeds.
