GREEN SOUP

Ingredients

• 2 tablespoons olive oil
• 1 cup Leeks sliced
• 3 cups Snow peas frozen is fine
• 3 cups vegetable broth
• 1 large handful Spinach leaves
• handful fresh Peppermint leaves
• 1 tablespoon Lemon/Lime juice
• 2 teaspoons Apple Cider Vinegar
• 1 clove Garlic
• 1 Avocados
• pink salt to taste
• freshly ground Black pepper to taste
