In this next phase we will introduce a variety of advanced techniques, ingredients and equipment that will expand your raw cuisine repertoire and open up a new world of possibilities. You will have the opportunity to create your own recipes and menu using these exciting techniques and ingredients. You will also have plenty of practice of plating and garnishing, bringing your presentation to the next level.

This course is designed to give you inspiration, expertise and confidence to improve your lifestyle and get started on a career within health and raw food. You’ll learn alongside some of the most experienced and knowledgeable chefs and experts in the field. The schedule includes food demos, hands-on experience, lectures, guest teachers and excursions. Breakfast and lunch is included as well as yoga in the morning and outings to some of Bali’s hidden gems on the weekend.

This module builds on the fundamentals of vegetable broth and stock taught in Level 1, with a progression into enhanced broths, called clarifications. You will create and plate your own consommé, a clear broth made with delicious flavorful tomatoes. In this course we will also introduce some new techniques such as reductions and culinary foams that will expand and elevate your plating repertoire.

Learn the principles and techniques of advanced equipment, including sous vide, smoking gun and sheet slicer. Mastering these appliances will bring your culinary repertoire to the next level, involving very gentle ways of “cooking” that preserves and concentrates the flavor of the food without the loss of color or nutrition.

This module focuses on crafting excellent cheeses solely from plants based ingredients. The result is decadent, satisfying nut cheeses as well as our unique and indulgent nut-free versions of boursin, feta and labneh. You will also produce condiments and salty snacks including raw marmalade and crackers to accompany your cheese on a luxurious and impressive plant based cheese board.

In this module we will reveal Alchemy’s popular recipes for white and milk chocolate. We’ll explore the ins- and outs of using a stone grinder to produce chocolate with an exceptionally smooth consistency and rich flavor. We’ll go through a range of ingredients that can be used instead of dairy to produce rich milky and white chocolate products that people won’t believe are vegan.
