A good stock is every chef’s secret to adding a rich depth of flavour to plant based soups, stews, gravies, and sauces. It can also be used to steam grains and poach or braise vegetables. While conventional stock relies on animal bones, this module teaches you how to create a perfect plant-based dark stock, light broth, and even glaze and demi-glaze using only plant-based ingredients.

This project challenges you to innovate, experiment, and push the boundaries of plant-based cuisine. Your creation will be evaluated on flavour, presentation, and originality, with the potential to be featured on Alchemy’s menu. It’s an opportunity to bring your culinary vision to life and showcase your talent in a real-world setting.
In Alchemy Cooked course you will learn plant based recipes from Alchemy Restaurant, directly from some of the worlds best plant based chefs and experts. Some secret recipes and tips revealed in this course are only shared at Alchemy Academy, and have never been published anywhere else.
